Cocoa butter has a low melting point, typically around 28-35°C (80-95°F). When the ambient temperature rises to this range, the cocoa butter begins to transition from a solid to a liquid state, causing the chocolate to melt. Proper storage of chocolate and avoiding temperature impacts is crucial to ensure the quality and flavor of the product, especially during long-distance transportation.

1- Sensitivity characteristics of chocolate:


Real chocolate (not counterfeit products using other fats instead of cocoa butter) contains a large amount of cocoa butter, a fat with a low melting point, usually around 28-35°C (80-95°F), making chocolate prone to melting when exposed to high temperatures. At high temperatures, chocolate can easily melt and lose its original shape. This not only affects its appearance but also the eating experience.

 

When chocolate melts, its smooth structure is disrupted and then crystallizes unevenly, altering the texture and losing its smoothness when eaten. Additionally, fresh chocolate varieties (like bonbons and truffles) that contain fresh cream are more susceptible to bacterial invasion at high temperatures, which can be harmful and lead to food poisoning when consumed.

* Dry ice or cold gel packs: If necessary, use dry ice or cold gel packs to maintain a low temperature during transportation. Be sure to wrap the dry ice or cold gel packs carefully to prevent them from coming into direct contact with the chocolate.

 

3. Choosing the right shipping service


If sending chocolate via a shipping service, choose a reputable carrier: Select a carrier with experience and a good reputation for handling fragile items that require temperature control. Opt for expedited shipping services (such as express delivery) to minimize the time the chocolate is exposed to uncontrolled temperatures.

 

It’s advisable to carry chocolate in your hand luggage when traveling by plane or bus, keeping it in the coolest environment possible. Avoid placing it in checked luggage to prevent it from being exposed to high temperatures, such as in the vehicle's trunk.

Pre-cooling before transport: Store chocolate in the refrigerator before packing: Ensure that the chocolate is fully cooled before packing to maintain a stable temperature for a longer time during transport.

Minimize transport time: Try to keep the transportation time as short as possible. If feasible, choose fast and reliable transport methods.
