Lam Dong, still further north and with higher hills marking the southern tip of a mountain range originating in the Himalayas, is a region where cacao can only grow in sheltered valleys. Nonetheless, the cocoa beans sourced from this more challenging region are often of exceptional quality. Lam Dong chocolate also has a fruity quality, but here the top notes are of kiwi, raspberry, dried figs, raisin, underlain by wood and liquorices aroma and an intense chocolate flavor that lingers on the palate.
